Our Ingredients & Dashi
At Kinmata, we carefully select each ingredient in keeping with the spirit of Kyoto kaiseki, with special attention to Kyoto vegetables and the depth of our dashi.
We source fresh produce and seafood daily from Nishiki Market and trusted vendors, preparing each dish with care and precision.
